My New Favorite Snack: Fruit Parfaits

An important part of every diet is fiber.  This is found in plants and cannot be digested.  It helps things travel along the digestive tract easier.  You can find fiber in fruits, vegetables, legumes, grains and it is now added in many products.

I've started making fruit parfaits as a mid-afternoon snack.  All you need is:

  • Low fat or fat free vanilla yogurt
  • Cereal or granola
  • Fresh fruit
I've been using Special K Strawberry Medley, which is just chock full of fiber on its own.  Just put 1 cup cereal or granola in a bowl, 1 cup yogurt, then lots of cut fruit.  I took the picture before I mixed it all up.  According to Myfitnesspal.com, this snack alone has 21 grams of fiber - practically a whole day's worth!  Yum.

What's your favorite snack these days?

I love fruit parfaits! My favorite right now is strawberries topped with Bear Naked Chocolate Granola.

My other favorite snack is celery with salsa. It's embarrassing how much of that stuff I eat each week. :)

I love to toss fruit and yogurt in the blender for a quick breakfast smoothie.

We've had a lot of melons (cantaloupe and watermelon) since it's summer. It's nice to find something healthy with vitamins that my kids will actually eat.
